Effects of Soybean milk-skimmilk mixtures on Dairy Calves in Veal Production

Twelve one week old male calves (4 Jerseys and 8 IIolsteins)were used to study the effects of feeding varying ratios of soybean milk to skimmilk(25:75, 50:50; and 75:25) as milk replacers on their growth and performance, carcass yield and quality of the veal.

The calves were fed with colostrums from birth to 7 days of age, then separated from their dams and transferred to individual stalls where they were randomly assigned the whole milk and the experimental milk replacer diets. The milk replacer was fed at the rate 20% of the animals weight, twice daily (7:00a.m and 4:00p.m). After  45 days all the calves were slaughtered, the carasses weighed chilled for 24hours, and then divided into wholesale cuts. The loin muscles were roasted in an electric oven and served to a panel of 10 judges for evaluation of the meat quality.

Results showed that the whole-milk-fed calves were superior to those given milk replaces in conversations of milk to meat, daily gain in weight and height , and in yield of meat and fat. Meat  from all claves was  similar in chemical compositions, but that from whole-milked calves had more protein and ash.

Roasted meat from all calves was rated good in flavor, slightly tender, and slightly to moderately acceptable. Veal from calves fed milk replacer was more juicy.
